"Utan Bisaya" or the Vegetable soup is a Filipino dish originated from the Visayas in the Philippines. This dish is very common and considered as one the most common food in every Filipino Visayan housholds specially the poor ones. The food's physical attributes may sometimes look unappealing to some who are not familiar with it or who have not eaten the food. But the food is very rich in vitamins and minerals because it contains different kinds of healthy vegetables.
The first time that I have tasted this was when I was still a child. At first I was not able to distinguish what the taste was because as a child I don't eat vegetables that much. But later I realized and have found it very healthy and delicious.
Squash or "Kalabasa"
Squash or “kalabasa” is a viny, creeping and trailing crop producing fruits and considered to be one of the most delicious vegetables. It is the most commonly and regularly grown among the cucurbits due to its rich source of Vitamin A, phosphorous and calcium .
String Beans "sitaw"
Green beans are an excellent source of vitamin C, vitamin K and manganese. Plus green beans are very good source of vitamin A (notably through their concentration of carotenoids including beta-carotene), dietary fiber, potassium, folate, and iron. And, green beans are a good source of magnesium, thiamin, riboflavin, copper, calcium, phosphorus, protein, omega-3 fatty acids and niacin.
Taro or "gabi"
Taro has low in Saturated Fat, Sodium, and Cholesterol. It is high in Dietary Fiber, Vitamin E, Vitamin B6, Potassium and
Manganese. Taro is good if you have interest in gaining or loosing weight and for maintaining good health.
Okra
Okra is low in calories and is a good source
of many nutrients including vitamin B6 and C, fiber,
calcium, and folic acid. It is effective for the prevention of neural
tube defects in developing fetuses mainly due to its high
content of vitamin B6, calcium, fiber, and folic acid.
Eggplant
Eggplant is an excellent source of dietary fiber. It's a very good source of vitamins B1, B6 and potassium. It’s a good source of copper, magnesium, manganese, phosphorus, niacin, and folic acid. Nasunin, an anthocyanin from eggplant peels, is a potent antioxidant and free-radical scavenger, and has protective activity against lipid peroxidation.
Moringa
Moringa or The "Miracle Tree" contains
1.Ten essential vitamins and eleven essential minerals.
2. All nine essential amino acids.
3. More than two dozen natural, powerful anti-oxidants.
4. More than two dozen natural, powerful anti-inflammatory nutrients.
5. Both omega-3 and omega-6 fatty acids.
An all in one dish contains healthy nutrients that will surely helps and makes your life a healthy one.

Hmmmm, intriguing food. I'm in Mindanao yet I've never encountered this food before. It looks like the pinakbet, without the ampalaya :). By the way, the pic above looks like it has fried fish in it, or am I seeing it wrong?

so...much! this was our favorite ulam with my husband...after ofc.when we got home it's either me or he prepared cooking with this menu, will always came perfect with it's taste...and really fulled our hungered stomach...best taste if you used fried fish and have sawsawan with salty fish,lemon and sili...try!!!!!!!
Oh my God! I am hungry now. The Tinola with malunggay and dried fish, ginataan with taro, etc....and kinilaw;D. I miss them all. Thanks for making me hungry, lol;-)
